The Easiest Chocolate Muffin Recipe

This is seriously the easiest chocolate muffin recipe you can make. I cannot take credit for these, someone gave me the recipe and I am unsure of the origin. But thank you to whoever thought of it. The idea seemed strange but I quickly realized what a great way to get a vegetable into my child who seems to be allergic to almost every other vegetable except broccoli and cauliflower.  So here it is …. couldn’t be any easier and they will never even know there is pumpkin in them.

The recipe is simply a package of Devil’s Food Cake Mix and one 15 oz. can of pumpkin puree. I tend to use the Libby’s Pumpkin Puree but I think any brand would be fine as long as the only ingredient is pumpkin. The cake mix I prefer is Duncan Hines Cake Mix because they have not shrunk the package like all the other brands, so the ratios still work great. The trick here is cooking spray. Spray everything: the bowl, mixing spoon, scoop, and muffin tin. It is hard to mix and the batter sticks to everything. Don’t give up. It just takes a second and then it all comes together. It tends to be a bit lumpy, don’t worry about that. Do not use muffin liners, the muffins stick to them. I usually add chocolate chips to the mix and that is wonderful also.

The Easiest Chocolate Muffins

These muffins are so easy and are a hidden source of vegetables…Pumpkin. Great for breakfast or an afterschool snack.
Prep Time 5 minutes
Cook Time 15 minutes
Servings: 12 muffins
Course: after school snack, Breakfast, Dessert, Snack

Ingredients
  

  • 1 15 oz can Pumpkin Puree
  • 1 box Devils Food Cake Mix Whatever brand you prefer

Method
 

  1. Preheat oven to 400 degrees Fahrenheit
  2. THIS IS VERY IMPORTANT. liberally spray your bowl and utensils with cooking spray to avoid sticking. DO NOT USE CUPCAKE LINERS. The muffins will stick to them.
  3. Combine the cake mix and the pumpkin puree. This is harder than you would expect. It takes a bit, but be persistent and it will all come together.
  4. Spread evenly in muffin tin. An ice cream scoop and an extra soup spoon work well here. You should get 12 muffins out of it. This step is very sticky.
  5. Cook for 15 minutes and they are done. Great warm.

Notes:  I have tried to use a mixer and it doesn’t work. Do not bother.

Donkey Punch – Rome Restaurant Review

Best street food in Rome? Head over to Donkey Punch in Trastevere. My college student daughter has been studying in Amsterdam for the semester and we wanted to go visit her. I have always dreamed of Rome and after a long battle with breast cancer, we decided to celebrate it was over and take this bucket list adventure with our family. So we all met in Rome for a great reunion.

She has a lot of friends in Rome, so we asked for recommendations for a little place to grab lunch..street food. They live in Trastevere and all agreed we needed to try Donkey Punch. Yes, you heard it right….. Donkey Punch. It is an eclectic little sandwich shop in the heart of Trastevere. There are murals of 70’s and 80’s rockers all over the walls and the sandwich names follow the same pattern.

The college aged girl who made the sandwiches was spectacular and recommended the “Eddie Van Halen” which was porchetta, tomatoes, pickled red onions, mayo and basil and it was done on grilled foccacia bread. I got the “Eric Clapton” which was tomatoes, buffalo mozzarella, pickled onions and rocket salad.  Mine was fabulous but the Eddie Van Halen was the best sandwich I have ever had in my life. Next time I will get that. 

The girl making them put so much love into making these sandwiches, I told her she was an artist and I meant it. We ate the sandwiches so quickly I couldn’t even get a picture of them. I would highly recommend Donkey Punch to anyone visiting the Trastevere neighborhood in Rome, Italy. It was a great meal on the go, with a great atmosphere and great price.

I have been dreaming of going back to Rome now that Covid has calmed down a bit and I have checked … Donkey Punch is still there and just waiting for me.

This Pasta Carbonara Recipe is the perfect pantry meal for a romantic night at home or a family friendly get together. It has been a staple in our house for years. Carbonara is a great comfort food recipe and is very easy to make. Basically, it’s a simple bacon and egg pasta that never fails to impress. Paired with a nice glass of wine it is the ultimate pasta dish for a romantic night of watching TV, dinner with friends, or a midweek meal with the family.

When a recipe card is as old and worn as this one, you know it’s a favorite. Although I’m not sure where I originally got the recipe, it has certainly earned its place in our home. At my bridal shower, many years ago, guests contributed recipes, and this might be one of those cherished contributions. My recipe box is filled with these well-loved treasures. This Pasta Carbonara stands out as the ultimate pantry meal.

I split this recipe in two and make half with regular pasta and half with gluten free to accommodate my whole family. It is great both ways!

Tempering the eggs with a little pasta water so they do not scramble is essential. When the eggs scramble it ruins the whole dish and you do not want that. I have also used other pasta styles. I have found Rotini is a hit and even ziti, but I prefer the traditional spaghetti. This Pasta Carbonara Recipe is the perfect pantry meal and a great go to in a pinch. I love the fact that is is so allergy friendly and easy to do. My current favorite gluten free pasta is Rummo. Give it a try, you will not be disappointed.

Pasta Carbonara

Course: dinner, lunch
Cuisine: Italian

Ingredients
  

  • 2 Tbsp. Olive Oil
  • 1 lb. Spaghetti cooked regular or gluten free
  • 1/3 lb. Bacon cut into small pieces (Pancetta or Guanciale is used also)
  • 4 cloves Garlic diced small
  • 1/4 tsp Red Pepper Flakes I tend to use more.
  • 1/2 cup White wine or Chicken Stock
  • 2 large Egg Yolks
  • 1/4 cup Reserved pasta water
  • 1/4 cup freshly grated parmesan cheese
  • 1 Handful of chopped fresh parsley 1 tsp. of dried parsley would substitute
  • Salt and Pepper to taste

Method
 

  1. Cook Pasta Al Dente. Reserve a cup of the pasta water in case needed for sauce
  2. In large skillet over medium high heat. Saute bacon until it browns. Remove bacon and put aside. Drain the bacon oil and then add two tbsp. olive oil, garlic and red pepper. Saute two minutes. Add wine and reduce by half.
  3. Beat eggs vigorously and stir in a ladle of pasta water. Drain the pasta and to bacon pan and remove from heat. Add egg mixture, cheese, parsley, salt and pepper and toss until well combined and cheese has melted. Serve with extra cheese.

Banana Bread

Banana Bread is a staple in most homes and is a wonderful comfort food recipe. Our family makes this Banana Bread Recipe at least once a month in either bread or muffin form. Never throw away old bananas, just freeze them and save them for this wonderful bread recipe. I make a great one these days but my first attempt is something that I am teased about still to this day.

There are days when cooking is just not my thing and the first time I made banana bread was one of them. Even now…… twenty five years later, I still feel the sting of humiliation.  I was newly married and wanted to make it for my husband.  My sister had given me one of those homemade cookbooks, that you buy at church fairs and school fundraisers, and it had a recipe I thought I would try.  As I was reading it, even I thought maybe 5 tbsp. of baking powder was a little much, but hey, what did I know?  I am alone in my apartment experimenting and at the exact moment I add the baking powder, it begins to rise like Mt. Vesuvius into some strange, freaking, elementary school science project! As it overflows the bowl, onto the counter and then the floor, the front door opens and who walks in… my husband and is brother!  I must have looked like a deer in the headlights, because they saw their prey and pounced. These are the two most hilarious, sarcastic men I know and they had a field day.  This is one of the many cooking disaster stories that they tell and even I have to say, if it was anyone else but me, it would be hysterical.

After all these years, and lots of practice, I make a great banana bread and they both will agree.

    The bananas need to be ripe….not pretty, just over ripe.  I actually freeze the bananas, so I always have some available.  The skin will turn black, but they are perfect inside. Sift all dry ingredients. (Hint: if you don’t have a sifter, use a whisk and very carefully whisk the dry ingredients together). Add in all the other ingredients. Pour into greased loaf pan and bake at 350 degrees for at least an hour.  Check with toothpick and if it comes out clean, it is done.

    Sometimes the simple recipes are the best. This Banana Bread Recipe is easy enough for everyone and is sure to impress.

    Materials

    • 2 cups all purpose flour Can substitute whole wheat flour
    • 1 tsp. baking soda
    • 1 cup sugar
    • 1/4 tsp. salt
    • 2 eggs beaten
    • 1/2 cup canola oil
    • 3 bananas very ripe (brown skins)

    Instructions

    This recipe brings back such fond memories of my childhood. It is not hard, but it is a bit time consuming. For some reason my late-father who loved to cook did not like to cook this. But he always made it for me on my birthday because he knew it was my favorite. It still is…. I have such wonderful memories of my birthday and this meal. I remember one time, he spent all day making it and we were all sitting at the table waiting for dinner. He liked to make a big deal out of the fact that he made it and was presenting it with a flourish, as he brought it to the table.

    Gluten Free Bagel Recommendation

    So… I stumbled across these in the grocery store a while back and thought I would give them a try. O’Doughs Thins (Sesame Bagel Thin). I am glad that I did! Gluten Free products aren’t always the best, but these are really good. My husband requests them even though gluten is not an issue for him. I have tried the other flavors also and they are fantastic too. O’Dough’s Bagel Things are also vegan, kosher and trans fat free if you are looking for that. I just know they are fantastic and it is nice to find a bagel I can look forward too.

    So if you are looking for a gluten free bagel, O’Dough’s is for you.

     

    Baking Tip – How to cut the perfect brownie.

    I know this sounds silly, but ever since someone told me about this trick, I use it every time. As a parent of a child with food allergies, I always bring the snacks….so I make a lot of brownies. I tend to cook brownies a bit underdone on purpose, which is our family’s preference. The trick is to use a plastic spoon when cutting them. The edges come out perfect and clean and the brownies do not stick to the knife. It is miraculous. Give it a try next time you are making brownies or blondies, you will be amazed.

    Trattoria Il Lucano – Rome Restaurant and Food Allergy Review

    As we were walking back from the Pantheon one night on our recent life-changing trip to Rome, the kids were starving and I didn’t have any idea where we could eat. Before our trip I studied and searched for restaurants that would accommodate our family and their food allergies (Peanuts, tree nuts, carrots, cucumbers, soy, gluten, legumes, eggplant and zucchini). Italy is known for being very food allergy friendly but information on specific restaurants is hard to find, so I tried to find blog information and there was a few, but it was outdated and limited. So I looked for restaurants that were recommended by friends or had good reviews and reached out to them. Then I made a master list of the places that I wanted to visit and nearby restaurants that were food allergy friendly. (We made the food allergy cards and they were great but only used them once). It was good old fashioned leg work that got the job done. I will share my hard work with you all to save you some time.

    I did a lot of prep work, but on this day I had run out of ideas. It was raining and we took a risk and stopped in at Trattoria Il Lucano and asked if they could accommodate us. We lucked out and it was a fabulous meal.

    Our waiter was named Mimo and he was so much fun. He suggested that my husband try the steak which they cook at the table. We got the caprese salad, cacio e pepe, pizza and lots of house wine! Always get the house wine. We sat outside under the awning and had a fabulous meal despite the uncertainty at the beginning. My husband is still dreaming of the steak!

    Miscellanea Pub – Food Allergies in Rome

    I did a lot of research on restaurants before going to Rome, especially ones that catered to food allergies. I have to say it was difficult. The general consensus was that Rome was very allergy friendly and we did find this to be true. But information on specific restaurants was tough to find. I knew the places that we wanted to visit (i.e. Colosseum, Vatican, Pantheon, etc.) So I wanted to discover restaurant choices near our destinations, so I wouldn’t be wandering with a “Hangry” family trying to find a place to eat. We were not looking for fancy…. inexpensive, great food, great atmosphere and food allergy friendly.

    One restaurant that kept popping up near The Pantheon was the Miscellanea Pub. They call themselves the “International Students Pub”, so we knew it would be inexpensive and casual. After a beautiful visit to the Pantheon at night, I told my family I had a restaurant for them.  It is a bit hidden, but the CityMaps2Go App was so helpful, because we didn’t have service most of the time.

    Franco was our waiter and he was fabulous. He was very friendly and told us the food allergies were not a problem, they would make it work (I made the food allergy cards, but honestly never had to use them..the one place we tried, seemed confused by them. But I am still glad that I had them, just in case).

    We got the Caprese salad, Bruschetta, Pette di pollo al limone (lemon chicken) Penna all’ arrabbietta (penne with spicy tomato sauce), Spaghetti alla carbonara (pasta carbonara) and Margherita pizza and a lot of wine (house wine). Always get the house wine in Italy! The food was amazing.

    I forgot this and we had no cash. Franco was so wonderful and felt so bad he walked my husband to the nearest ATM and then brought us free desserts and “sexy wine”. The “sexy wine” is something you have to discover for yourself. When he brought it and I gleefully cried “Is this the sexy wine?” he was thrilled I knew what it was. (I do my research.. haha). It was wonderful!

    As we were leaving, Mickey (the owner) was sitting outside and thanked us for coming. We are from Boston and he is great friends with the former mayor of Boston and former Vatican ambassador, Ray Flynn. We had a wonderful conversation about Rome and Boston. Miscellanea Pub is a must see on your next trip to Rome!

    La Canonica – Food Allergies in Rome

    We recently had the opportunity to visit Rome and what an experience it was. My eldest has been studying in Europe for the last five months and we agreed to meet her in Rome. We were all so excited to see her and experience this magnificent city. When we arrived, we headed out to explore and get something to eat. We were right across the Ponte Sisto bridge from the charming neighborhood of Trastevere. Numerous people told us that Trastevere was a win for dining and character and they were so correct. It remains my favorite neighborhood in all of Rome.

    We wandered, enjoying the sites and trying to pick which restaurant to go to. They all looked so wonderful, but we have a lot of food allergies to deal with in our family, so we were a bit apprehensive. Then it started to rain…it started to pour! So we just ran into the closest one we could find and we were very happy with our decision. The restaurant was La Canonica. It was the perfect first restaurant for us. It was cute, cozy with a fabulous waiter and chef who both warmly welcomed us and made us feel like family.

    The waiter handled the food allergies like it was nothing…not a big deal.  (nuts, tree nuts, legumes, soy, eggplant, zucchini, gluten and carrots, cucumbers). This was the beginning of a wonderful meal and my daughter got to eat anything she wanted. They made it work and we were thrilled. That first glass of wine after a long day of traveling was wonderful. (Italy Tip: always order the house wine… cheap and wonderful) We had the pizza, carbonara, raviolis and a seafood over risotto thing my husband got that looked amazing! I would highly recommend this restaurant on its own but for someone with a food allergy they were fabulous!
